We have a lot of pickle lovers in my family (hello Kool-Aid pickles!) so when I’m looking for a fast and easy snack or game day appetizer these easy pickle wraps are always at the top of my list.

I love that they need on 3 simple ingredients I usually already have on hand and I can whip them up in less than 15 minutes. The sour dill pickle complements the salty ham perfectly!

I’ve heard these called Minnesota sushi and I’m fairly certain they are a Midwest thing because I never heard of them growing up in the South but my husband is a native Michigander and he loves them!

All you need for these pickle and cream cheese roll-ups are whole baby dill pickles or dill pickle spears, cream cheese, and ham slices. I prefer to use slices of deli ham as it’s a little thicker and holds the roll-up easier.

Step by step

This is such an easy recipe, even the kids can make them!

  1. Pat pickles dry with a paper towel.
  2. Lay a slice of ham flat on a cutting board. Spread 1-2 tablespoons of the cream cheese mixture over the ham, spreading all the way to the edges.
  3. Place the pickle on top of the cream cheese at one end of the ham slice and roll up tightly, securing with toothpicks if needed. Slice into 1” pieces with a sharp knife. Refrigerate until ready to serve.

  • like our ham and cream cheese tortilla pinwheels, these ham and pickle roll ups can be made a day ahead of time and kept in the refrigerator in an airtight container

Variations

  • use different types of lunch meat instead of the deli ham slices, roast beef, salami, turkey, and corned beef are all great options
  • add flour tortillas to make these dill pickle pinwheels appetizer
  • add a little ranch dressing or ranch seasoning to the cream cheese layer or use a flavored cream cheese spread
