Ingredients
- cherry tomatoes
- fresh mozzarella balls – mozzarella pearls or ciliegine mozzarella are usually found in the cheese or deli section of the grocery store
- fresh basil leaves
- balsamic vinegar
- black pepper
Step by step
- Make the balsamic reduction: Add balsamic vinegar to a small saucepan and bring to a boil. Reduce heat and simmer for 8 minutes, stirring often. Set aside to cool.
- Prepare Skewers: Thread 2 mini mozzarella balls onto each skewer, followed by a fresh basil leaf. If the basil leaf is too large, you can fold it in half to fit better on the skewer.
- Add Cherry Tomatoes: Next, thread a cherry tomato onto the skewer, followed by another basil leaf.
- Finish with Mozzarella Pearls: Add 2 more small mozzarella pearls to the skewer, ensuring each skewer has a balanced combination of tomatoes, cheese, and basil.
- Drizzle with Balsamic Glaze: Once all the skewers are assembled and placed on the serving platter, use a spoon to drizzle them with balsamic glaze for a sweet and tangy flavor.
- Season with Black Pepper: Sprinkle freshly ground black pepper over the skewers to add a hint of spice and depth of flavor.

- Avoid freezing the assembled skewers, as the texture of the ingredients may become watery and mushy upon thawing.

Ingredients
- 1/2 cup balsamic vinegar
- 12 cherry tomatoes
- ½ cup mozzarella pearls
- 24 fresh basil leaves
- ½ teaspoon freshly ground black pepper, or to taste
Instructions
- Add balsamic vinegar to a small saucepan and bring to a boil. Reduce heat and simmer for 8 minutes or until thickened, stirring often. Remove from heat and allow to cool completely.
- On a skewer place 2 small pearls of mozzarella.
- Then add a basil leaf. You can fold it double if it’s too big.
- Then add a cherry tomato.
- Then add another basil leaf.
- And add 2 small mozzarella pearls again.
- Repeat until you run out of ingredients.
- Drizzle with balsamic glaze and season with black pepper to taste.
