Today, I am combining two of my favorite desserts – gingersnap cookies and cheesecake – in an easy, no-bake dessert that is perfect for Thanksgiving or any holiday get together! Before we dive right in to the recipe, are you a crunchy, crispy gingersnap lover or are you a dunk & dip gingersnap aficionado? I LOVE to dip gingersnaps in a super cold glass of milk and let them get just the slightest bit soggy. Is that weird? But rest assured, there is nothing weird about these gingersnap cheesecake truffles!
These truffles have all the spicy goodness of gingersnap and gingerbread cookies without all of that pesky baking! And they are dipped in and drizzled with white chocolate … ah, life is good! You just need a quick trip to your local grocery store and some serious will power not to forget all about making truffles and eat the filling by the spoonful!
Gingersnap Cheesecake Truffles ~ An Easy No-Bake Dessert
- One 16 oz. bag of ginger snap cookies
- 8 oz. of softened cream cheese
- One 12 oz. bag of white candy melts or white almond bark
Add the ginger snaps to the bowl of your food processor and pulse until you have coarse crumbs.
Add the softened cream cheese to the ginger snaps crumbs and pulse to combine.
You can also place the cookies in a large zipper storage bag and smash them with a heavy bottomed glass or rolling pin.
Use a small cookie scoop or portion out about one tablespoon of out the crumb mixture and roll it into balls.
Place on a parchment lined tray and refrigerate for 30 minutes.
Melt the candy melts/almond bark according to package directions.
Dip cookie truffles into the melted candy melts, allow the excess to drip off and return to parchment lined tray to set.
You can drizzle any remaining melted candy melts over the top of the truffles for a decorative touch and to hide any imperfections.

These gingersnap cheesecake truffles were gobbled up in just a few days! I would find one suspiciously missing after a certain 13 year old’s trip into the kitchen to “get a drink” … hmmmm.
Need a great way to end a big Thanksgiving meal?! Skip the pie and grab a two-bite truffle! Sweet but not too sweet, decadent but bite sized so you won’t feel totally guilty after one … or two! These gingersnap cheesecake truffles make a delicious to-go treat tucked in a cello bag, too!
