So, I guess we need to get this out of the way early on.
Eggnog: Yes or No?
I am, obviously, firmly in the eggnog YES camp. Give me all the eggnog things. Traditional eggnog, eggnog cookies, eggnog hot chocolate, eggnog no-bake cookies, and anything else I can get my eggnog lovin’ hands on.
So, this tender cake made with eggnog in the batter and the frosting is for all my fellow eggnog aficionados!
Why I love this recipe
While this cake may be dressed up in its holiday finery – look at all those sprinkles! – it starts with a boxed cake mix to make it super easy and fast.
Ingredients
- vanilla cake mix + ingredients listed on the box (usually oil and egg)
- eggnog
- ground nutmeg
- instant vanilla pudding mix
- Cool Whip
Step by step
- Preheat the oven and spray a baking pan with nonstick spray.
- Prepare the cake mix according to package instructions EXCEPT replace the water called for with eggnog and add 1/8 teaspoon of ground nutmeg.
- Bake according to the package instructions. After baking let the cake cool completely on a wire rack.
- When ready to frost, mix together 1 cup of eggnog, pudding mix, and another 1/8 teaspoon of gorund nutmeg. Allow the pudding mix to set up and thicken for 5 minutes.
- Fold the whipped topping into the pudding mixture until just incorporated. Spread the frosting over the top of the cake. Refrigerate until ready to serve. Add sprinkles before serving.
Tips for Best Results
- some sprinkles tend to bleed so I recommend adding them just before you are ready to serve the cake
- if you are able, zest fresh nutmegs to amp up the flavor in the cake and frosting
Storage
Store leftover eggnog cake covered in plastic wrap or in an airtight container in the refrigerator for up to 3 days.
I do not recommend freezing this cake while frosted as the texture of the frosting is off after thawing, but you can freeze the unfrosted cake for up to 3 months.

- 1 cup eggnog
- One 3.4 oz box, instant vanilla pudding mix
- 1/8 teaspoon freshly grated nutmeg (or ground nutmeg)
- 8 oz. tub whipped topping, thawed
