So, I guess we need to get this out of the way early on.
Eggnog: Yes or No?
I am, obviously, firmly in the eggnog YES camp. Give me all the eggnog things. Eggnog, eggnog cookies, eggnog coffee creamer, eggnog pudding pies and anything else I can get my eggnog lovin' hands on.
So, this tender cake made with eggnog in the batter and the frosting is for all my fellow eggnog aficionados!
While this cake may be dressed up in its holiday finery - look at all those sprinkles! - it starts with a boxed cake mix.
Easy, right? When I was making the cake, I replaced the water called for on the package instructions with eggnog and added some freshly grated nutmeg to the batter. The vanilla eggnog cake bakes up soft and tender and full of eggnog flavor. Then, I made my favorite frosting (that also doubles as pudding mousse!) with more eggnog and more fresh nutmeg.
Finally, I added a generous dash of tiny white snow flakes sprinkles, white nonpareils and more fresh nutmeg to the top of the cake. I am a firm believer that all cakes should have sprinkles. 🙂
I guess you can say that this cake has eggnog from top to bottom.

If you want to pick up a few things to make an Eggnog Cake & Fluffy Eggnog Frosting, here are my faves**:
- Fresh whole nutmeg - this is a game changer for the flavor! Keep it on hand to grate into coffee, gingerbread and fruit cobblers and crumbles!
- Microplane - I use this all the time to zest citrus, grate nutmeg and shave chocolate and hard cheeses ... get one, you need one!
- Snow Flake Sprinkles - I also found this wintery multi-pack that has snow flake sprinkles, too!
- White nonpareils - these are a great staple sprinkle to keep in your stash to add some texture so you don't have to use so many of your 'fancy' sprinkles 😉

Description
With eggnog and freshly ground nutmeg in the cake batter and the frosting, this Eggnog Cake & Fluffy Eggnog Frosting tastes just like my favorite holiday drink!
Ingredients
- One 15.25 oz box, vanilla or white cake mix + ingredients called for on the package
- Eggnog to replace the water in the cake mix
- ⅛ teaspoon freshly grated nutmeg (or ground nutmeg)
- 1 cup eggnog
- One 3.4 oz box, instant vanilla pudding mix
- ⅛ teaspoon freshly grated nutmeg (or ground nutmeg)
- 8 oz. tub whipped topping, thawed
Instructions
- Preheat oven to the temperature called for on the cake mix package. Prepare a 9x13 baking pan with nonstick cooking spray.
- Mix the cake according to the package instructions EXCEPT replace the water called for with eggnog and add ⅛ teaspoon of freshly grated nutmeg.
- Bake according to package instructions or just until a toothpick inserted into the center of the cake comes out clean.
- Allow cake to cool completely.
- In a bowl, whisk together 1 cup of eggnog, the pudding mix and nutmeg. Allow the pudding mixture to set up for 1-2 minutes.
- Gently fold the thawed whipped topping into the pudding mixture until just incorporated.
- Spread the fluffy eggnog frosting over the cake and refrigerate until serving.
- Just before serving, garnish the top of the cake with snow flake sprinkles, white nonpareils and more freshly grated nutmeg.
