Description
With eggnog and freshly ground nutmeg in the cake batter and the frosting, this Eggnog Cake & Fluffy Eggnog Frosting tastes just like my favorite holiday drink!
Ingredients

- One 15.25 oz box, vanilla or white cake mix + ingredients called for on the package
- Eggnog to replace the water in the cake mix
- 1/8 teaspoon freshly grated nutmeg (or ground nutmeg)
- 1 cup eggnog
- One 3.4 oz box, instant vanilla pudding mix
- 1/8 teaspoon freshly grated nutmeg (or ground nutmeg)
- 8 oz. tub whipped topping, thawed
Instructions
- Preheat oven to the temperature called for on the cake mix package. Prepare a 9×13 baking pan with nonstick cooking spray.
- Mix the cake according to the package instructions EXCEPT replace the water called for with eggnog and add 1/8 teaspoon of freshly grated nutmeg.
- Bake according to package instructions or just until a toothpick inserted into the center of the cake comes out clean.
- Allow cake to cool completely.
- In a bowl, whisk together 1 cup of eggnog, the pudding mix and nutmeg. Allow the pudding mixture to set up for 1-2 minutes.
- Gently fold the thawed whipped topping into the pudding mixture until just incorporated.
- Spread the fluffy eggnog frosting over the cake and refrigerate until serving.
- Just before serving, garnish the top of the cake with snow flake sprinkles, white nonpareils and more freshly grated nutmeg.
