Description

With eggnog and freshly ground nutmeg in the cake batter and the frosting, this Eggnog Cake & Fluffy Eggnog Frosting tastes just like my favorite holiday drink!


Ingredients

Scale
  • One 15.25 oz box, vanilla or white cake mix + ingredients called for on the package
  • Eggnog to replace the water in the cake mix
  • 1/8 teaspoon freshly grated nutmeg (or ground nutmeg)
  • 1 cup eggnog
  • One 3.4 oz box, instant vanilla pudding mix
  • 1/8 teaspoon freshly grated nutmeg (or ground nutmeg)
  • 8 oz. tub whipped topping, thawed

Instructions

  1. Preheat oven to the temperature called for on the cake mix package. Prepare a 9×13 baking pan with nonstick cooking spray.
  2. Mix the cake according to the package instructions EXCEPT replace the water called for with eggnog and add 1/8 teaspoon of freshly grated nutmeg.
  3. Bake according to package instructions or just until a toothpick inserted into the center of the cake comes out clean.
  4. Allow cake to cool completely.
  5. In a bowl, whisk together 1 cup of eggnog, the pudding mix and nutmeg. Allow the pudding mixture to set up for 1-2 minutes.
  6. Gently fold the thawed whipped topping into the pudding mixture until just incorporated.
  7. Spread the fluffy eggnog frosting over the cake and refrigerate until serving.
  8. Just before serving, garnish the top of the cake with snow flake sprinkles, white nonpareils and more freshly grated nutmeg.
