I have pretty much declared this the Summer of No Bake Desserts.  (Yes, the calendar still says Spring but the thermometer trumps it with Summer.)  The thought of heating the oven up right now makes my power bill and deodorant tremble with fear.  I know there are probably hotter places, but Florida in the Summer is no joke.  So, bring on the easy peasy, cool and creamy no bake desserts like this Strawberry Shortcake Pie!

So technically I am taking the liberty of calling this Strawberry Shortcake Pie.  While there isn’t really a shortcake biscuit or sponge cake, the shortbread pie crust is a sweet, buttery counterpart to the vanilla pudding fluff and bright, tart strawberries.  And really, with all that deliciousness stuffed into a pie crust, who’s complaining?!

Wasn’t that easy?  This pie would be a delicious dessert for your Memorial Day potluck, picnic or Summer get together.  Just make sure to keep it cold until serving.  Just look at all those strawberries in that cool, creamy vanilla pudding fluff!

I, like most food bloggers, give a TON of stuff away.  To neighbors, coworkers, the neighborhood kids … totally a perk for our friends and family 🙂  As a result, there is a sweet little exchange between one of Chris’ coworkers, Virgil, Virgil’s wife Maria and I.  Virgil brings containers filled to the brim with arroz con gandules (a rice/bean dish) that Maria makes for me.  It is simple and hearty and I eat it every day for lunch until it is gone!  So, in return, I send them back treats, like this Strawberry Shortcake Pie.  Dessert really is my love language. 😉  After our recent exchange, Virgil told Chris that Maria talked about their “friend that they’ve never met that bakes for them”.  Or no bakes in this case 😉

A shortbread crust, creamy vanilla fluff filling and tons of fresh strawberries make this easy, no-bake Strawberry Shortcake Pie a family favorite!


Ingredients

Scale
  • One Keebler shortbread pie crust (or graham cracker crust)
  • One small box instant vanilla pudding mix
  • One cup cold milk
  • One 8 oz. tub of Cool Whip (thawed)
  • 1 1/2 cups strawberries (cut into bite sized pieces)
  • Whole strawberries for garnish (optional)

Instructions

  1. In a bowl, stir together the vanilla pudding mix and cold milk until thoroughly mixed.
  2. Allow to set for about one minute.
  3. Fold in the thawed Cool Whip and stir just until combined.
  4. Gently fold in the chopped strawberries.
  5. Pour mixture into the shortbread pie crust.
  6. Refrigerate until ready to serve and then garnish with additional whole strawberries.

  1. Oh boy this will be a favorite dessert around here for while. Saw some others will be making also.
    Love no baking. It’s pretty darned hot here, supposed to be 100 on Sunday and high 90’s til then. Sure wish hubs would want to go to state park lake, dog and i would love it. He’s not as much of water lover as dog and I. Love to float out on lake on floatee, breeze pushing me, keeping me cool. That’s all I ask, get to go to lake. Well, not gonna happen but after we get paid next week watch me then. Have great weekend. At least we don’t have high humidity here, know how that is tho, KY was cooker whole 5 yrs. we lived there.
