Why? Because these sweetly spiced sugar cookies start out with store bought cookie dough. But hey ... no judging! We are going to doctor them up with a shot of pumpkin pie spice and they will taste like fancy-schmancy from scratch cookies!
So, to further your pumpkin addiction, {taste this} ... pumpkin spice sugar cookies!!
So, I used one tube of Pillsbury sugar cookie dough. Slice open the tube and put it in a mixing bowl. Sprinkle in 1 & 1/2 - 2 teaspoons of pumpkin pie spice (or more to taste) and mix the spice into the dough well. I used my hands (clean of course!) and they smelled amazing :)
On a lightly floured surface, roll the dough out until it is about 1/4 inch thick. Using a cookie cutter (pumpkin shaped, of course!), start cutting out cookies and place on baking sheet.
I use ungreased baking stones. Bake for approximately 8-11 minutes; centers should be baked through and cookies lightly browned. (Baking time can vary based on individual ovens, baking sheets/stones and cookie thickness.) My batch yielded about 36 cookies and they went fast!
I love the soft sugar cookie texture with the spicy taste of Fall ... enjoy with a mug of hot tea on your porch swing as the evening cools down ... or just sip sweet tea in the A/C if you live in Florida ;)

ReplyDeleteWhat a great idea! Unfortunately I've never eaten pumpkin pie, it's not so common in Germany and so I assume there'll be no referring spice mix, too. But your cookies look yummy!!
