Stuffed bell peppers are the perfect meal for even the most veggie-averse crowd. Flavorful ground beef and rice are mixed with seasonings and marinara and give the sweet peppers the perfect filling. Top with cheese and watch this easy meal get gobbled up, no oven required!

Ingredients
I love that this meal doesn’t take fancy ingredients, it’s also a great way to use leftover ground beef and rice!
- ground beef
- bell peppers
- rice
- marinara
- cheese
- onion
- salt, garlic powder, thyme, & oregano
Step by step
- Brown the ground beef in a large skillet and drain.
- Remove the tops of the peppers and dice, hollow out the bottoms.
- Stir together the beef, rice, and seasonings with 1 cup of the marinara and 1 cup of the cheese.
- Stuff the peppers with that delicious filling!
- Place any leftover stuffing and marinara in the bottom of the slow cooker and then place the peppers inside.
- Cook for 5 hours on low.
- Top with cheese and cook an additional 15 minutes or until it is melted.
Variations and add-ins
- use ground turkey, ground sausage, or a mixture instead of ground beef
- add diced tomatoes, corn, black beans, or other veggies to the rice mixture
- change the flavor by which type of cheese you choose: mozzarella, colby jack, Mexican, and cheddar cheese are all great choices
- substitute brown rice or quinoa for the white rice
- give it a Mexican flair by seasoning the meat with taco seasoning, adding in corn and black beans and topping with Mexican cheese, sour cream, and fresh cilantro

Ingredients
- 1 pound ground beef
- 5 bell peppers (assorted colors)
- 1 1/2 cups cooked rice
- 24 ounce jar marinara sauce
- 1 1/2 cups shredded cheese (any kind)
- 1 small white onion, finely diced
- 1/2 teaspoon salt
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/4 teaspoon garlic powder
Instructions
- Brown the ground beef in a large skillet. Drain.
- Cut the tops off of the bell peppers. Remove the stem, dice the tops and set aside. Remove the seeds and ribs from the pepper carefully so you do not break the sides.
- In a large bowl combine beef, diced pepper, rice, 1 cup of marinara, 1 cup cheese, onion, and seasonings. Stir to mix.
- Stuff the peppers with the rice mixture, filling all the way to the top.
- Add any remaining filling and the rest of the marinara to the the bottom of the slow cooker.
- Add the stuffed peppers to the slow cooker, being careful to keep them upright. Cover and cook on low for 5 hours without opening the lid.
- Remove lid, top with cheese and replace the cover. Cook an additional 15 minutes or until the cheese is melted.
