Ingredients

  • boneless, skinless chicken breasts
  • cream of chicken soup
  • ​cream of mushroom soup
  • onion soup mix
  • chicken broth
  • long grain white rice

Step by step

This is such and easy dinner recipe!

  1. Preheat the oven to 350 degrees F and spray a 9 by 13 inch casserole dish with nonstick cooking spray.
  2. In a large bowl combine the condensed soups, dry onion soup mix, and chicken broth and stir to mix. 
  3. Add uncooked rice and stir. Pour mixture into the baking dish.
  4. Add chicken breasts on top of the rice mixture and season with salt and ground black pepper if desired.
  5. Wrap the dish tightly with aluminum foil and bake for 1 hour and 15 minutes.
  6. Remove from oven and let sit 5-10 minutes before uncovering and serving.

Tips and variations

  • want a faster meal? Use chicken tenders or cut the boneless chicken breasts into bite-sized chunks before baking. Depending on the size the chicken piece, the cooking time should be reduced to 25-30 minutes with this method. Be sure it reaches 165 degrees Fahrenheit to ensure it is cooked through.
  • switch up the condensed soup to change the flavor and use what you have on hand, cream of celery soup and cream of broccoli soup are good options to try
  • season the chicken breasts with garlic powder, onion powder, or sprinkle onion soup mix over the top to add even more flavor
  • add cheese or crunchy onions to the top for the last 5 minutes it bakes
  • use low sodium soup and broth to reduce the salt
  • mix in frozen vegetables with the rice

This allows the liquids to steam the rice and keeps the chicken nice and juicy. If you peek you will let the steam escape, so no peeking!

Yes, just ensure you cook the chicken to an internal temperature of 165 degrees.

Can I make this with brown rice?

I have only tested this recipe with white rice, if you use wild rice or brown rice you will need to increase the cooking time.

Can it be made ahead of time?

You can make this chicken dish ahead of time in multiple ways. You can assemble the casserole, then cover and refrigerate until ready to bake. You may need to extend the baking time 5-10 minutes if it goes in cold. You can also bake it ahead of time and reheat when ready to serve.
