Description
No Peek Chicken and Rice is a super easy 6 ingredient dinner recipe with just 5 minutes of prep time, perfect for busy weeknights. This one-pan wonder combines juicy chicken, aromatic rice, and a medley of savory flavors thanks to onion soup mix and condensed soup. Just remember not to peek while it’s baking!
Ingredients
- 10 ounce can condensed cream of chicken soup
- 10 ounce can condensed cream of mushroom soup
- 2 cups chicken broth or stock
- 1 ounce packet onion soup mix
- 2 cups long grain white rice
- 2 pounds skinless boneless chicken breasts
- salt and pepper (optional)
Instructions
- Preheat the oven to 350 degrees F and spray a 9 by 13 inch casserole dish with nonstick cooking spray.
- In a large bowl combine the condensed soups, dry onion soup mix, and chicken broth and stir to mix.
- Add uncooked rice and stir. Pour mixture into the baking dish.
- Add chicken breasts on top of the rice mixture and season with salt and ground black pepper if desired.
- Wrap the dish tightly with aluminum foil and bake for 1 hour and 15 minutes.
- Remove from oven and let sit 5-10 minutes before uncovering and serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the oven at 350 degrees or in the microwave.
Freeze chicken rice casserole in a freezer safe container up to 3 months. Thaw overnight in the oven and bake at 350 until heated through.
