Description

No Peek Chicken and Rice is a super easy 6 ingredient dinner recipe with just 5 minutes of prep time, perfect for busy weeknights. This one-pan wonder combines juicy chicken, aromatic rice, and a medley of savory flavors thanks to onion soup mix and condensed soup. Just remember not to peek while it’s baking!


Ingredients

Scale
  • 10 ounce can condensed cream of chicken soup
  • 10 ounce can condensed cream of mushroom soup
  • 2 cups chicken broth or stock
  • 1 ounce packet onion soup mix
  • 2 cups long grain white rice
  • 2 pounds skinless boneless chicken breasts
  • salt and pepper (optional)

 


Instructions

  1. Preheat the oven to 350 degrees F and spray a 9 by 13 inch casserole dish with nonstick cooking spray.
  2. In a large bowl combine the condensed soups, dry onion soup mix, and chicken broth and stir to mix.
  3. Add uncooked rice and stir. Pour mixture into the baking dish.
  4. Add chicken breasts on top of the rice mixture and season with salt and ground black pepper if desired.
  5. Wrap the dish tightly with aluminum foil and bake for 1 hour and 15 minutes.
  6. Remove from oven and let sit 5-10 minutes before uncovering and serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the oven at 350 degrees or in the microwave.

Freeze chicken rice casserole in a freezer safe container up to 3 months. Thaw overnight in the oven and bake at 350 until heated through.
