I love takeout copycat recipes and this easy Instant Pot pork lo mein is no exception. It’s hard to justify getting takeout when it’s so easy to make it at home myself!

Why I Love This Recipe

This homemade Lo Mein recipe is bursting with vibrant flavors and fresh ingredients. It is a quick and easy way to satisfy your cravings for Asian-inspired cuisine without leaving the house thanks to pressure cooking. With tender pork, crisp vegetables, and perfectly cooked noodles, every bite is bursting with flavor.

Ingredients

Like our Mongolian ground beef noodles, this recipe has a few ingredients you’ll need from the Asian section of the grocery store: hoisin sauce, sesame oil, and mirin. Other than that the rest of the ingredients are pretty standard.

  • spaghetti (you can use lo mein noodles also)
  • center-cut pork
  • chicken broth
  • veggies: red bell pepper, bok choy, carrots, and onion
  • garlic
  • soy sauce – I usually opt for low sodium soy sauce
  • hoisin sauce
  • sesame oil
  • mirin
  • vegetable oil
  • alt and pepper
  • sesame seeds (optional)

Step by step

  1. Dice pork into bite size pieces and place into a bowl or ziploc bag. Add 3 tablespoon of the soy sauce along with the sesame oil to the pork and stir to coat. Allow to marinate 15 minutes while you prep the vegetables
  2. Wash and dry produce and slice into thin pieces.
  3. Turn the Instant Pot on to Sauté mode. Add vegetable oil to coat the bottom and add meat and marinade to the pot. Stir fry the meat until the pork is golden brown on all sides. Remove meat from the pot and set aside.
  4. Add garlic to the pressure cooker and cook for 30 seconds, stirring constantly.
  5. Pour chicken broth into the pot and scrape the bottom of the pan to deglaze and release all that flavor.
  1. Break the spaghetti noodles in half and lay in a crisscross pattern (this helps prevent sticking). Press the noodles into the liquid.
  2. Place the lid on the Instant Pot and seal the valve. Cook on high pressure for 4 minutes.
  3. Do a quick release of the pressure and leave the lid on an additional 4 minutes.
  4. Carefully remove the lid and stir the noodles. Add the remaining soy sauce, hoisin sauce, and mirin and stir to mix.
  5. Set to Sauté mode once again and add the vegetables. Cook, stirring often, for 5-8 minutes until vegetables reach your desired tenderness.
  6. Season to taste with salt and pepper and garnish with sesame seeds before serving if desired.

Tips for Best Results

  • For added flavor, marinate the pork for at least 15 minutes before cooking.
  • Ensure the noodles are submerged in the liquid to prevent them from sticking together.
  • Feel free to customize the vegetables according to your preference or what you have on hand. Mushrooms, broccoli florets, and snow peas are other great options.
  • Adjust the cooking time for the vegetables based on your desired level of crispness.
  • Omit the pork entirely to make Instant Pot vegetable lo mein.

Storage

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or on the stove before serving for optimal flavor and texture.
