Description

Instant Pot Lo Mein is a fast and easy recipe with only a few minutes prep. Pork, veggies, and noodles are cooked to perfection in a flavorful tasty sauce.


Ingredients

Scale
  • 1 pound center pork 
  • 5 tablespoons soy sauce, divided
  • 1 tbsp sesame oil
  • 1 red bell pepper 
  • 1 lbs. baby bok choy
  • 2 small carrots
  • 1 yellow onion
  • 1 tablespoon vegetable oil
  • 4 cloves of garlic, minced
  • 2 cups chicken broth
  • 8 ounces spaghetti 
  • 1 tbsp hoisin sauce
  • 1 tbsp mirin 
  • salt & pepper
  • sesame seeds for garnish, optional


Instructions

  1. Dice pork into bite size pieces and place into a bowl or ziploc bag. Add 3 tablespoon of the soy sauce along with the sesame oil to the pork and stir to coat. Allow to marinate 15 minutes while you prep the vegetables
  2. Wash and dry produce and slice into thin pieces. 
  3. Turn the Instant Pot on to Sauté mode. Add vegetable oil to coat the bottom and add meat and marinade to the pot. Cook, stirring often, until the pork is golden brown on all sides. Remove meat from the pot and set aside.
  4. Add garlic to the Instant Pot and cook for 30 seconds, stirring constantly.
  5. Add water to the pot and scrape the bottom of the pan to deglaze.
  6. Break the spaghetti noodles in half and lay in a crisscross pattern (this helps prevent sticking). Press the noodles into the liquid.
  7. Place the lid on the Instant Pot and seal the valve. Cook on high pressure for 4 minutes.
  8. Do a quick release of the pressure and leave the lid on an additional 4 minutes.
  9. Carefully remove the lid and stir the noodles. Add the remaining soy sauce, hoisin sauce, and mirin and stir to mix.
  10. Set to Sauté mode once again and add the vegetables. Cook, stirring often, for 5-8 minutes until vegetables reach your desired tenderness.
  11. Season to taste with salt and pepper and garnish with sesame seeds before serving if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days.
