There are times of the year when almost every weeknight I rely on slow cooker meals to get dinner on the table. I’m always trying new slow cooker recipes! This Crock Pot teriyaki chicken recipe is one that I find myself turning to time and again because it only needs 10 minutes of prep and dinner is waiting when I come home.

I like to serve this easy teriyaki chicken recipe over white rice which I can prep earlier in the day if I’m in a rush or use instant rice. It’s also tasty with a side of easy egg fried rice or egg rolls as well!

Why I love this recipe

  • less than 10 minutes of easy prep time
  • no need for store-bought sauce, you can make your own teriyaki sauce with just a few simple ingredients
  • tastes just as good as takeout
  • this is a family favorite, even picky eaters love this meal
  • it’s also great for meal prep, make it on the weekend for lunch all week long!

Ingredients

Slow Cooker Teriyaki Chicken ingredients on counter
  • boneless, skinless chicken breasts
  • cornstarch
  • soy sauce – I recommend a low sodium soy sauce
  • brown sugar and honey sweeten the sauce
  • garlic
  • ground ginger
  • sesame oil
  • green onions and sesame seeds for garnish

Step by step

  1. Cut the chicken into cubes and toss with cornstarch to coat.
  2. Mix sauce ingredients in a large bowl.
  3. Add chicken to the slow cooker and pour the sauce mixture over the top.
  4. Cook on high for 3-4 hours or low 6-7 hours.
  5. Serve over white rice and garnish with green onions and sesame seeds.

Variations

  • Substitute boneless skinless chicken thighs for the chicken breasts.
  • Use 2 teaspoons of minced fresh ginger instead of ground ginger
  • Instead of cubing the chicken before cooking, you can cook the chicken breasts whole and then shred with two forks before serving. If cooking the chicken breasts whole, be sure to check the temperature to ensure they are fully cooked to a safe temperature.
  • Add vegetables: green beans, snap peas, broccoli, bell peppers, or any stir-fry vegetables work well and taste delicious in that flavorful sauce!

FAQs

Is it safe to cook raw chicken in the slow cooker?

It is 100% safe to cook raw chicken in the slow cooker, that’s what its made for! It is not, however, safe to cook frozen chicken in the slow cooker as it can stay too long in the “danger zone” temperatures where bacteria can grow according to food safety guidelines from the USDA. If you only have frozen chicken it would be a better idea to pressure cook this recipe instead on the chicken setting of the Instant Pot.

Is it better to cook chicken on high or low in a crockpot?

Either is fine but when I have time I prefer to cook chicken breast on low for a longer total cook time to help prevent the chicken from over-cooking and drying out.
