Well, I have finally been hit with some St. Patrick’s Day inspiration!  It is March for Pete’s sake, Keri.  So, while you won’t be seeing green (for that see Pistachio Fluff), I DO have some super fun rainbow stuff to share with you.  Like easy Rainbow Snack Mix!  Perfect for kids, perfect for adults, sweet & salty and delicious!!

Make a fun snack mix with assorted rainbow colored tasty treats! This easy colorful Rainbow Snack Mix is perfect for St. Patricks Day
It’s so colorful and I love the additional of fluffy white marshmallow ‘clouds’!  Because marshmallows.  YUM!  The mix of sweet and salty is pretty perfect, too.  Every now and then, a Goldfish pops up with that little hit of salt.  And a Goldfish with a marshmallow?  Money.  Trust me!

Easy Rainbow Snack Mix

Ingredients

  • Trix cereal
  • Froot Loops cereal
  • Colors Goldfish crackers
  • Mini marshmallows

Instructions

  1. In a large bowl, mix together equal parts of Trix cereal, Froot Loops cereal and Colors Goldfish crackers.
  2. Just before serving, stir in an equal part of mini marshmallows.
  3. Scoop into serving cups {or hands} and enjoy!

Notes

Soft squishy marshmallows will make crispy crunchy elements a little softer, so make sure to add them just prior to serving whenever possible.

Wouldn’t this be fun to pop in the kiddos’ lunch box for the week of St. Patrick’s Day?  Man, why do I think of these things after my boys are past that fun age of surprise lunch box treats?!  Oh well.  There is no shame in my game … I may or may not be taking a bag of this to work today 😉

    1. Hi Charmaine – the recipe just uses equal parts of all of the ingredients. So if you use a cup of each (Trix, Froot Loops, Goldfish & marshmallows), you would end up with 4 cups of the rainbow snack mix. You can double or triple the recipe if needed. Enjoy!!
