No-Bake Pound Cake Bites

Do you know what today is?!  Why, yes, it is Tuesday.  And yes, it is March 4th.  But better than that … it’s National Pound Cake Day!!  That’s right, an entire day to celebrate and enjoy all things pound cake!  I mean, we could top lemon pound cake with a tart berry sauce, bake a chocolate pound cake bread pudding, enjoy butter pound cake with ice cream, or even relish one of these rich and decadent chocolate peanut butter pound cake stacks!  However you choose to celebrate today, I know it will be delicious!

Don’t they look like itty bitty fondant covered cakes?!  I just love anything with sprinkles!  Here, take another look at the bite-sized, super sprinkled no-bake pound cake bites!

Mini chocolate covered pound cake bites - SO cute!

Don’t worry!  You don’t have to be a trained cake decorator or need to have any fancy equipment.  Nope, just grab a Sara Lee frozen pound cake and a cookie cutter and you are well on your way to these delicious little pound cake bites!

No-Bake Pound Cake Bites

  • Yield: 20 no-bake pound cake bites 1x

Ingredients

Scale
  • One 16 oz. frozen Family- Size Sara Lee All Butter Pound Cake
  • One 16 oz. package of vanilla Candiquik candy coating (OR white chocolate chips or candy melts)
  • Assorted sprinkles

Instructions

  1. Line a sheet tray with parchment paper.
  2. Slice the pound cake into ten 1 – 1 1/2 in slices.
  3. Use a small round cookie cutter to cut two rounds from each slice of pound cake and place on the sheet tray.
  4. Melt the Candiquik according to package directions.
  5. Spoon about a tablespoon of melted candy coating over each round, smoothing it over the top and down the sides of each pound cake round.
  6. Add additional candy coating until the entire pound cake round is covered. (It’s okay to have a “puddle” around each pound cake bite.)
  7. Add sprinkles to the top of each pound cake bite.
  8. Once the Candiquik is set, use a sharp knife to cut away any of the “puddle” around each pound cake bite.

Notes

Save the remaining pound cake (after you have cut out the rounds), cube it and use it for pound cake parfaits!!

You can make these no-bake pound cake bites for any holiday or event!  Shimmery white jimmies atop these pound cake bites would be just perfect for a wedding shower or even wedding favors!

And birthdays!  What birthday is complete without a cake?!  Sprinkle-icious pound cake bites are so fun!

And just in time for Spring … Bunny Bites!!  Use your trusty cookie cutter to cut two pound cake rounds.  Use one for the head and cut one in half for two ears.

Coat the head and ears with Candiquik and add white jimmies!  Using the same technique described above, use a sharp knife to cut away and of the excess “puddle” of candy coating and enjoy!  These guys were the first to go when my boys taste-tested for me.

  14. This may be a silly question, but do you thaw the pound cake, or cut out the pieces when it’s still frozen?

    1. Hi Julie! I actually thought it was a little easier to cut when the pound cake was still a little frozen. It helped get nice clean edges with the cookie cutter!

  21. These are adorable! I am trying to make them for Easter, but my Wilton candy melts will not melt enough to pour & I am making a huge mess. I have tried the double boiler method as well as the microwave. They don’t get any thinner than frosting. Any tips? Do I need to buy a different candy product or is there a way to get these thinner???

  22. I made these like petit fours, slicing the pound cake 1/2 as thick. Putting seedless raspberry jam on one round, topping it with another and then spooning the candy-melt over the top. FABULOUS! Now for Memorial day, we are going to do homemade lemon curd, blueberry and strawberry petit fours and even a chocolate pound cake with Nutella maybe covered in chocolate candy melt with chopped hazelnuts! The possibilities are ENDLESS!
