Slow cooker asparagus is an easy way to prepare this tasty veggie for holiday meals or to feed a crowd - just set it and forget it!
- 2 pounds fresh asparagus
- 1/3 cup lemon juice
- 1/2 cup water
- 2 cloves garlic, minced
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon pepper
- 1 lemon, sliced
- Trim ends of asparagus and place in the bottom of the slow cooker.
- Mix lemon juice, water, garlic, salt, and pepper in a small bowl or measuring cup. Pour mixture over the asparagus.
- Top with lemon slices.
- Cook on low for 1 1/2-2 hours. (see note below)
Check for doneness after 1 1/2 hours. Asparagus may require up to 2 hours depending on thickness of the stems.
