Description

Sheet Pan Quesadillas are the ultimate easy dinner solution! With savory ground beef, colorful bell peppers, and gooey cheese all baked to perfection on one sheet pan, this dish is perfect for feeding a crowd.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound lean ground beef
  • 2 bell peppers, diced
  • 1 medium yellow onion, diced
  • 1 tablespoon taco seasoning
  • 8 tortillas
  • 2 cups shredded Mexican or colby jack cheese
  • toppings: sour cream, salsa, pico de gallo, guacamole, green onions (as desired)


Instructions

  1. Preheat the oven to 425°F.
  2. In a large skillet over medium heat, combine the oil, diced onions, and peppers. Sauté for about 10 minutes or until soft.
  3. Add the ground beef and brown it until cooked through and no longer pink, breaking it up as it cooks.
  4. Meanwhile, arrange the tortillas on a baking pan, ensuring that half of the tortillas around the edges hang over the sides. Use one whole tortilla in the center to cover the entire bottom.
  5. Once the meat is browned, pour the mixture over the tortillas. Spread evenly.
  6. Sprinkle with shredded cheese, fold the tortillas over the filling, and use an additional 2-3 tortillas to cover the center of the filling.
  7. Place another pan on top of the quesadillas to press them down and maintain the shape.
  8. Bake in the preheated oven for 20 minutes.
  9. Remove the top baking sheet. Continue baking for an additional 10-15 minutes or until the tortillas are golden brown and crispy.
  10. Cut into pieces and serve with your favorite taco toppings.
