Lime Poke Cake – An Easy Springtime Dessert!

Description

Lime Poke Cake is a simple but stunning dessert that is sure to be a new family favorite! With just a few ingredients and a little make-ahead prep time, you’ll have the perfect party or potluck dessert!


Ingredients

Scale
  • white cake mix, plus ingredients required on box
  • 3.4-ounce box instant lime Jell-O
  • 8 oz. tub of whipped topping (thawed)
  • Sprinkles and lime slices for garnish (optional)

Instructions

  1. Bake the cake according to package directions in a 9 by 13-inch pan. Cool completely.
  2. Use the handle of a wooden spoon or a large drinking straw to poke holes over the entire surface of the cooled cake.
  3. Prepare Jell-o with 1 cup boiling water and 1/2 cup cold water. (This is 1/2 cup less water than the directions on the box.)
  4. Pour Jell-o over the cake – making sure to get some in every hole and over the surface of the cake.
  5. Refrigerate overnight or at least three hours.
  6. Top with whipped topping and add sprinkles and lime slices for garnish just before serving.

Notes

Cake may be refrigerated covered up to 3 days.

To freeze poke cake, do not add whipped topping. Wrap tightly and store in the freezer for up to 3 months. Thaw overnight in the refrigerator and top with Cool Whip before serving.
