- 2 yellow onions
- 4-ounces cream cheese
- ½ cup sour cream
- ¼ cup mayonnaise
- 3 tablepsoon unsalted butter
- 1 tablespoon chives, sliced
- ¼ teaspoon salt, or to taste
- ¼ teaspoon black pepper, or to taste
Instructions
- Peel and thinly slice the onions.
- On medium-high heat, melt the butter and add the sliced onions. Stir occasionally. Lower the heat when they start to brown. Then cook some more on medium-low heat. This process can take about 20-25 minutes.
- In a food processor, combine the cream cheese, sour cream, and mayonnaise. Season with salt and pepper, then process until smooth.
- Once the onions are caramelized, let them cool for 5 minutes. Add them to the dip in the processor and pulse briefly to mix them in.
- Serve with chips and enjoy!
