- 1 ½ cups cooked and shredded chicken
- 3 large flour tortillas
- ½ cup buffalo sauce
- 8-ounces cream cheese, softened
- 3 tablespoons ranch dressing
- ¾ cup shredded mild cheddar cheese
- Optional: blue cheese crumbles and chopped green onions, for garnish
Instructions
- In a large bowl, beat the softened cream cheese with a hand or stand mixer until it’s completely smooth.
- Add the buffalo sauce and ranch dressing. Mix until everything is fully blended.
- Stir in the shredded cheddar cheese and shredded chicken by hand until blended thoroughly.
- Place a tortilla on a clean surface and spread a generous, even layer of the buffalo chicken filling across it.
- Roll the tortilla up tightly from one end to the other. Repeat the process with the remaining tortillas.
- Transfer the rolled tortillas to the freezer for at least 15 minutes to help them firm up to make slicing easier.
- Slice the rolls into pinwheels with a sharp knife, about ½ to 1 inch thick. For cleaner cuts, wipe your knife after each slice.
- Garnish with crumbled blue cheese and chopped green onions before serving if desired.
