Description

Broccoli Cheddar Orzo combines tender orzo pasta with fresh broccoli in a creamy cheddar sauce. It’s a delicious and nutritious side dish that comes together in less than 30 minutes.


Ingredients

  • 2 tablespoon unsalted butter
  • ¼ cup red onion or sweet onion, diced
  • 1 cup chopped shredded carrots
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon white pepper
  • ½ teaspoon salt
  • 1 cup orzo pasta
  • 1 ½ cup chicken broth
  • 1 cup heavy cream
  • 1 1/2-2 cups chopped broccoli
  • ½ cup shredded cheddar cheese


Instructions

  1. Over medium heat, add butter to a skillet or dutch oven.
  2. Add carrots, onion, and orzo. Mix well, then add the seasonings.
  3. Cook for 1-2 minutes, then add the broccoli.
  4. Once coated in seasonings and butter, add the chicken broth.
  5. Cook for 9-10 minutes until the pasta is tender.
  6. Add heavy cream and cheese, and stir.
  7. Cook for an additional 4-6 minutes until the cheese is melted and creamy.
