Description

Slow cooker marry me chicken is a dish made with chicken breasts, sun-dried tomatoes, and a creamy sauce simmered to tender perfection in your slow cooker.


Ingredients

Scale
  • 4 boneless skinless chicken breasts
  • salt and pepper
  • 1/2 teaspoons garlic powder
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons butter
  • 1 cup chicken broth or chicken stock
  • 1 cup heavy cream
  • 2 teaspoons minced garlic
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 3 tablespoons chopped sun dried tomatoes
  • 1/2 cup fresh grated parmesan
  • fresh basil for garnish
  • 1 tablespoon cornstarch and 2 tablespoons water, optional


Instructions

  1. Season the chicken breasts on both sides with salt, pepper, and garlic powder.
  2. Heat the butter and olive oil in a skillet over medium-high heat and lightly sear the chicken breasts.
  3. Transfer the chicken breasts to your crockpot, along with the oil and butter left in the skillet.
  4. In a mixing bowl, whisk together chicken broth, heavy cream, minced garlic, and the remaining seasonings.
  5. Pour the mixture over the chicken in the crockpot. Then, add the sun-dried tomatoes.
  6. Cook on low for 4-5 hours, until the chicken reaches an internal temperature of 165°F.

    Remove the chicken from the crockpot and place it on a plate. Cover and set aside.

  7. Whisk the sauce in the crockpot and add the grated parmesan cheese. Season to taste with additional salt and pepper if desired.
  8. To thicken the sauce, mix together the cornstarch slurry and add to the crock pot. Stir to mix. Turn the crockpot to high for 10 more minutes. After 10 minutes on high, return the chicken to the crockpot and add fresh basil. Serve hot.
