- 1 ½ pounds Yukon Gold potatoes
- 2 tablespoons unsalted butter
- 2 cloves garlic
- 1 teaspoon all-purpose flour
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 teaspoons dried thyme
- 1 teaspoon salt
- ½ tsp black pepper
Instructions
- Preheat oven to 400°F. Grease a baking dish.
- In a large saucepan, melt the butter with garlic until fragrant (about 1 min). Stir in flour and cook for 1–2 minutes to form a roux.
- Slowly whisk in the cream and cook until slightly thickened (1-2 minutes). Add Parmesan, thyme, salt, and pepper; whisk until smooth.
- Arrange the potato slices vertically in the baking dish. Pour the sauce over the top and sprinkle with more Parmesan if desired.
- Cover with foil and bake for 30 minutes. Remove foil and bake for another 30 minutes, until tender and golden on top.
- Let rest for 10 minutes before serving.
