Nutty Coconut Homemade Granola

Description

This easy homemade granola recipe is packed with nuts and coconut, sweetened with maple syrup, and toasted to perfection. It’s perfect for breakfast or a quick crunchy snack.


Ingredients

Scale
  • 2 cups quick cook oats
  • 1/3 cup almond slices
  • 1/3 cup pecan pieces
  • 1/3 cup sweetened coconut flakes
  • 1/3 cup olive oil
  • 1/3 cup maple syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon nutmeg


Instructions

  1. Preheat oven to 350*.
  2. Line a large sheet pan with parchment paper.
  3. In a bowl, mix oats, almonds, pecans and coconut.
  4. Mix all spices in a small bowl.
  5. Drizzle oat and nut mixture with olive oil and maple syrup and mix thoroughly.
  6. Sprinkle 1/2 of the spice mixture over the oat mixture and stir.
  7. Sprinkle remaining spice mixture over the oat mixture and stir.
  8. Spread granola in a thin layer on the sheet pan.
  9. Bake 12-15 minutes, rotating pan half way through baking.
  10. Allow granola to cool and store in an airtight container.
