How to Roast Frozen Vegetables

Ingredients

Scale
  • 12 ounces frozen mixed vegetables (or other veggies of your choice)
  • 1 tablespoon extra virgin olive oil
  • seasonings of your choice (see notes)

Instructions

  1. Preheat oven to 450 degrees. Place baking sheet in oven while it is preheating.
  2. Place frozen vegetables in a large bowl and add olive oil, salt and pepper, and any other seasonings of choice. Toss to coat.
  3. Spread vegetables on the pre-heated baking sheet in a single layer being sure not to crowd.
  4. Roast 15 minutes, flip vegetables and roast another 15 minutes or until done.

Notes

Adjust roasting time according to the size of the vegetables, smaller more delicate cuts will be done faster than larger cut vegetables.
