Ingredients

  • 1 pound tomatillos, husks removed
  • 2 jalapeño peppers
  • 1/2 onion, roughly chopped
  • 2 cloves garlic
  • 1/2 cup fresh cilantro leaves
  • Juice of 1 lime
  • Salt, to taste

Instructions

  1. Preheat your oven’s broiler. Put the tomatillos and jalapeño peppers on a baking sheet lined with aluminum foil. Broil for 5-7 minutes, turning occasionally, until the skins are charred and blistered.
  2. After roasting, put the tomatillos and jalapeños in a blender or food processor. Add chopped onion, garlic cloves, fresh cilantro leaves, and lime juice. Blend until smooth, adding water if needed to get your desired thickness.
  3. Taste the salsa verde and add salt to taste. Adjust the spiciness by adding more jalapeño peppers for heat or removing the seeds and membranes for a milder flavor.
  4. Transfer the salsa verde to a bowl and refrigerate for at least 30 minutes to blend the flavors. This step is optional but can improve the taste.
  5. Once chilled, put the salsa verde in a serving bowl and garnish with more cilantro leaves if desired. Serve with your favorite dishes or as a condiment for any Mexican dishes.
