- 1⁄2 cup flour
- 1 tablespoon all-purpose seasoning
- 1 to 1 1/2 lbs jumbo shrimp, peeled and deveined
- 2 eggs
- 2 cups panko bread crumbs
- 3 cups oil
- 1-2 lemons
Instructions
- Preheat the oil in a deep pot to 350°F.
- Prepare coating stations in separate bowls: seasoning and flour in one, beaten eggs in another, and panko bread crumbs in a third bowl.
- Pat the shrimp dry then dip into the flour mixture, then dip in beaten eggs, and finally roll in breadcrumbs. Set aside.
- Working in batches, fry 6 – 8 shrimp at a time until golden brown, about 5 minutes.
- Drain fried shrimp on paper towels. Serve with lemon wedges, if desired.
