Easy Egg Salad with Bacon

Description

Easy Bacon Egg Salad starts with the creamy classic egg salad recipe we all love and takes it to the next level with the addition of crispy, salty bacon! 


Ingredients

Scale
  • 2 eggs
  • 2 slices of bacon
  • 1.5 tbsp mayonnaise
  • 1 tsp mustard
  • salt and black pepper, to taste
  • parsley, for garnish if desired


Instructions

  1. In a medium-sized pot, bring water to a boil.
  2. Cook the eggs for 8 minutes to hard boil.
  3. In the meantime, cook the bacon until crispy, then dice it into small pieces.
  4. Slice the egg, then flip the egg one-quarter and slice again. Then add sliced egg to a bowl.
  5. Add the mayonnaise and mustard and stir. Season with salt and pepper, to taste. Mix until well combined.
  6. Add the diced bacon and chopped parsley, mix to combine.
