Easy Egg Fried Rice – 15 Minute Recipe

Description

Easy Egg Fried Rice is a simple and quick recipe perfect for busy weeknights. You can customize this 15 minute recipe easily with what you have on hand, it always turns out delicious!


Ingredients

Scale
  • 2 large eggs
  • 3 tablespoons butter, divided
  • Small yellow onion, diced
  • 2 medium carrots, peeled and diced
  • ¾ cup frozen peas
  • 1 ½ teaspoons minced garlic, about 3 cloves
  • salt and pepper to taste
  • 4 cups cooked white rice
  • 3 green onions, thinly sliced
  • 4 tablespoons soy sauce
  • optional: 1/2 teaspoon toasted sesame oil and/or 1 teaspoon oyster sauce


Instructions

  1. Whisk eggs. Heat ½ tablespoon of butter in a large skillet over medium-high heat. Scrambled eggs until cooked through and remove to a separate plate.
  2. In the same skillet add another tablespoon of butter and heat until melted. Add onion, carrots, and peas to the skillet and cook for 5 minutes of until onion and carrots are soft. Add garlic and season with a large pinch salt and pepper.
  3. Increase the heat to high and add remaining butter. Stir until melted.
  4. Add rice, green onion, and soy sauce. Stir to combine.
  5. Cook for 3-5 minutes to fry the rice.
  6. Add egg back into the rice and stir to combine. Remove from heat and season to taste with extra soy sauce, sesame oil, or oyster sauce if desired.

Notes

Store leftovers in an airtight container in the refrigerator up to 3 days.
