Description

These chunky monkey cookies are soft and chewy that are loaded with chunks of chocolate, nuts, and sweet banana goodness.


Ingredients

Scale
  • 2 and 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup butter, one stick, softened
  • 1/2 cup peanut butter, organic
  • 1/2 cup brown sugar
  • 2 medium ripe bananas
  • 1 cup dark chocolate chips, dairy-free
  • 1/2 cup walnuts, chopped


Instructions

  1. Preheat your oven to 375°F. Line two large baking sheets with parchment paper and set aside.
  2. In a large mixing bowl, combine the dry ingredients: flour, baking soda, salt, and cinnamon. Mix well and set aside.
  3. In a medium bowl, cream together the softened butter and peanut butter until fluffy. Add the brown sugar and continue mixing until well combined. Set aside.
  4. In another bowl, mash the ripe bananas into small bits using a fork. Add the mashed bananas to the peanut butter mixture and mix until thoroughly combined.
  5. Pour the peanut butter and banana mixture into the bowl of dry ingredients. Mix until everything is well combined. Fold in the dark chocolate chips and chopped walnuts until evenly distributed throughout the dough.
  6. Using a cookie scoop or spoon, drop rounded spoonfuls of dough onto the prepared cookie sheet, leaving some space between each cookie. Bake in the preheated oven for 9 to 10 minutes, or until the cookies are golden brown.
  7. Allow the cookies to cool on the baking sheets for 2 minutes before transferring them to a wire rack to cool completely. Once cooled, served and enjoy!
