Smoky chipotle peppers and a touch of adobo take traditional ranch to the next level in this Chipotle Ranch Dressing. It delivers rich, tangy flavor and comes together easily, making it perfect for salads, chicken, or drizzling over roasted veggies.
Ingredients
- ½ cup mayonnaise
- ½ cup sour cream or Greek yogurt
- 1 tablespoon fresh lemon juice
- 1–2 chipotle peppers in adobo sauce, finely chopped, adjust for spice level
- 1 teaspoon adobo sauce, from the Chipotle can
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt, or to taste
- ¼ teaspoon black pepper
Instructions
- In a bowl, combine mayonnaise, sour cream, and lemon juice, whisking until the mixture is smooth.
- Add chopped chipotle peppers, adobo sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper, stirring to mix evenly.
- For an extra creamy texture, puree the dressing using a food processor or an immersion blender.
- If it feels too thick, gradually add water until it reaches your preferred consistency.
- Chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
Notes
Store this spicy ranch dressing in an airtight container in the refrigerator, where it will stay fresh for up to one week. The flavors actually continue to deepen over the first day or two, so it often tastes even better after sitting overnight. Give it a good stir before using, as some separation is natural.
If the dressing thickens up in the fridge, simply whisk in a teaspoon or two of water to bring it back to your preferred consistency. I like to make a batch at the beginning of the week, so I have it ready for quick lunches and easy dinners throughout the week.
