- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/3 cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 cup Cadbury mini eggs, roughly chopped
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F and prepare a baking sheet by lining it with parchment paper. Set aside.
- In a large mixing bowl, cream together the butter and sugars until smooth. Beat in the egg and vanilla extract until well incorporated.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined and a crumbly dough forms.
- Gently fold in the chopped Cadbury eggs and chocolate chips. Using a medium cookie scoop (2 tablespoons), scoop the cookies onto your parchment-lined pan.
- Bake for 9-11 minutes, until cookies are starting to turn golden brown at the bottom, cookies will still be very pale on the top.
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
