Description

My best Creamy Chicken Pasta Salad features smoky grilled chicken, whole grain pasta, fresh celery, and a creamy homemade dressing. Whether for lunch, a picnic, or a potluck, this dish is a flavorful and filling choice.


Ingredients

For the Salad:

  • 1 (16 oz.) box of whole grain rotini pasta, cooked, drained and cooled
  • 2 lbs. grilled chicken, chopped into bite-sized pieces
  • 1 cup diced celery

For the Dressing:

  • 1 1/2 cups mayonnaise
  • 1 1/2 cups sour cream
  • 1/2 cup milk
  • One packet of ranch dressing/dip seasoning mix
  • 2 tablespoons dried dill
  • 1 teaspoon minced garlic, smashed into a paste, or 1/8 teaspoon garlic powder
  • 1/2 teaspoon lemon juice
  • salt & pepper, to taste


Instructions

  1. In a mason jar or bowl, mix all dressing ingredients together and refrigerate for at least three hours, preferably overnight, to develop the flavors.
  2. In a large bowl, combine the cooked pasta, grilled chicken, and diced celery.
  3. Pour the prepared dressing over the salad and toss everything together until well coated.
  4. Garnish with fresh dill or parsley if desired, and enjoy!

Notes

  • Be sure to refrigerate any leftovers. If the pasta soaks up too much of the dressing, you can always add a splash more mayonnaise to bring it back to life.
