It may be the end of summer but that doesn’t mean you can’t still enjoy a delicious homemade Waffle Ice Cream Sandwich! These indulgent treats are easy to make and the perfect way to celebrate any occasion!

With school back in session I wanted to make an extra special treat for my boys the first week. If you’re hoping to do the same, you’re in luck! When you look through the flyer, you’ll notice the Ice Cream Adventures promotion! You can also look for the at-shelf signs throughout Publix which highlight the savings during the promotion. I knew exactly what sweet treat I wanted to make for my boys: Waffle Ice Cream Sandwiches!
During the Ice Cream Adventures promotion, you can buy Fisher’s Chef’s Naturals Walnuts for $4.99, Coolhaus Awesome Ice Cream pints 2 for $7, 2 for $5 Reddi Whip, and Kodiak Cakes Frozen Power Waffles 2 for $9. I started making the Ice Cream sandwiches by setting my ice cream on the counter to soften, then toasting the Buttermilk & Vanilla Kodiak Cakes Frozen Power Waffles. After they cooled, I spread the Campfire S’mores Coolhaus Awesome Ice Cream over the top, working quickly as this part can get messy! I immediately topped the ice cream with another waffle and put it in the freezer to harden up.
I let the ice cream sandwiches freeze for about 45 minutes, then it was time to take them to the next level! I melted some chocolate and got ready to dip!
I used a wide bowl to melt the chocolate so it was wide enough to dip the ice cream sandwich in. I wanted it to cool slightly before dipping the ice cream sandwiches so I used that time to pour my Fisher Chef’s Naturals Walnuts on a small plate to add after the chocolate.
I dipped one side of the ice cream sandwich into the chocolate and allowed any excess to drip off before dipping the same side in the walnuts.
You can use your hand to add any extra walnuts to the chocolate before, you guessed it, we put them back in the freezer to harden up again.
The ice cream sandwiches are perfectly delicious served as is once they harden in the freezer for about 30 minutes, but since it was the first week of school AND the Reddi Wip was on sale at Publix, we went ahead and took them over the top!
I’m pretty sure I got the coolest mom ever award when I presented these ice cream sandwiches to my three boys. They devoured them and I can’t even count how many times they said thank you!
These waffle ice cream sandwiches were the perfect way to end our first week back at school, and I highly recommend you give them a try!
