Monday calls for cake. And not just any cake. But chocolate cake stuffed with a layer of ooey gooey caramel, pecans and chocolate chips. That kind of goodness makes this Turtle Candy Cake the perfect It’s not the weekend anymore, but you are totally going to rock this week! kind of cake. Thank goodness. Because not only is this a Monday, but for us, the Monday after a glorious weekend at the beach. There really should be a day between Sunday and Monday for times like these … but hey! At least we have cake!!
Turtle Candy Cake
Now, you really can’t tell from that picture that there is a SERIOUSLY delicious cake under that inconspicuous Cool Whip. And so much more than just cake.
Turtle.
Candy.
Cake.
You see, tucked between two layers of moist chocolate cake is a layer just chock-a-block full of the tasty components from turtles {the candy not the reptile} … pecans, chocolate chips and a rich caramel sauce. Here, have a closer look:
Once you pour the caramel over the first layer of cake, it settles over and bakes right in, making that surprise layer all the more rich and delicious. {And it makes the cake ooey gooey and sticky – so just be a little patient as you ease pieces of the Turtle Candy Cake out of the pan.} As you might suspect, those pecans add a great crunch. And melty chocolate chips just amp up the chocolate flavor, which in my opinion, is never a bad thing. Especially if I have to trade my bathing suit and sunscreen for a laptop and meetings!

Ingredients
- 1 box German Chocolate Cake Mix + ingredients called for on box
- 2 cups caramel bits
- 1/2 cup evaporated milk
- 1 cup chopped pecans
- 1 cup mini chocolate chips
Instructions
- Preheat oven to 350*.
- Mix cake mix as directed on box.
- Pour 1/2 of the batter into a 9×13 baking pan prepared with non-stick cooking spray.
- Bake 20 minutes or until layer is just baked through.
- While the first layer is baking, melt caramel bits with evaporated milk over medium heat in a small sauce pan.
- Pour melted caramel over the baked layer.
- Sprinkle evenly with pecans and mini chocolate chips.
- Spread the remaining batter over the pecans and chocolate chips.
- Bake an additional 25 – 30 minutes until the center of the second layer is done.
- Frost with chocolate glaze or Cool Whip.
- Can be served warm or cold.
