Three Cheese Cornbread Squares
That’s right, not one, not two but three types of cheese baked right into soft, fluffy cornbread squares! These cornbread squares are just the right size to perch on your plate next to the green bean casserole and sweet potatoes but with big enough flavor to steal the show! {Sorry not sorry, Mr. Turkey 😉 }
Can’t you just see all that cheese baked into tender cornbread?! My favorite part? The crispy cheesy edges on every cornbread square – YUM!!

Ingredients
- One package Simply Homemade Cornbread Mix
- 1 egg
- ⅓ cup unsalted butter (melted)
- ⅔ cup milk
- ⅓ cup each: shredded mozzarella cheese (shredded sharp cheddar cheese, shredded Parmesan cheese)
Instructions
- Preheat oven to 375*.
- Prepare a 12 well brownie/bar pan with non-stick cooking spray.
- Stir together the Simply Homemade Cornbread Mix, egg, melted butter, milk and cheeses.
- Spoon into the 12 wells of the baking pan.
- Bake for 12 – 14 minutes until a toothpick poked into the center of a cornbread square comes out clean.
If you don’t have one of those cool brownie/bar pans – you may want to add it to your Christmas list! This nonstick bar pan {affiliate link} is a good option! Every brownie has the yummy crispy edge, you can make single portions of lasagna in it and I love to make cookie bars with it – like the peppermint cheesecake cookie bars I shared over at One Project Closer!
Now, back to these cheesy squares of fluffy cornbread goodness … leftovers {if there are such a thing} would make amazing croutons for a salad, the perfect vehicle to smoosh some turkey, stuffing and cranberry sauce in for a midnight snack or eaten with a big bowl of crock pot chili on a cold night!!
Spice it up and add a little heat with some diced jalapenos or use pepper jack cheese. Make everyone’s heart go pitter patter and add some crispy bacon and tons of sharp white cheddar cheese. Honestly, the Simply Homemade Cornbread Mix bakes up so light and fluffy (it is not gritty at all!), if you decide to add anything to it, I’m sure it is going to be pretty fantastic!
