Today I’ve got two unexpected additions to your favorite guacamole that will rock.your.world. And believe it or not, you can enjoy it with tortilla chips for only 180 calories! This could be the best Cinco de Mayo party recipe yet!
So, what makes this guacamole such a rock star? Look close … those bright red bits are not tomatoes. They are strawberries! And did you catch the bright pop of color from orange zest? Now, I know you may have just wrinkled your nose and you may have just said to yourself: “Guacamole with fruit?! She’s finally lost it.” But trust me on this one! It is BEYOND divine!
My favorite part about this recipe is that by using pre-portioned 100 calorie packets of guacamole, you can enjoy your new favorite dip for chips (because it will be) without the guilt! My other favorite part is that by making each single serving fresh, there is no discoloration … especially since there won’t be any leftovers!
Orange Strawberry Guacamole
Yield: one delightfully delicious serving
One 2 oz. packet of guacamole or 2 oz. of your favorite homemade guacamole (I found a box of six, 100 calorie packets in the produce section of my grocery store)
1 large ripe strawberry, finely diced
Sprinkle of freshly grated orange zest
Stir the diced strawberry and orange zest into your guacamole. Enjoy with 12 mini round tortilla chips for the perfect Spring or Summer snack.
