Some food truly does taste better when served with a side of fond memories...
The Little Madre's family hails from Ohio - a fairly rural part actually, where the roads only intersect at mile intervals, where you can still see lush green fields of sunflowers and soybeans and corn, where barns are in use and it is not uncommon to see combines and tractors used for more than just demolition derbies.
When the summer strawberries were in season, all plump and sun-warmed, sometimes, if we were lucky, my grandma would make strawberry shortcake for dinner. That's it ... the softest, fluffiest shortcake biscuits and tart smashed berries sweetened with sugar.
So today, I'm sharing this memory and my grandma's recipe with you for {taste this}!
Shortcake Biscuits
2 cups flour
2 T sugar
1 teaspoon baking powder
½ teaspoon salt
½ cup butter
1 egg, beaten
⅔ cup evaporated milk
Preheat your oven to 425*. In a large bowl, combine flour, sugar, baking powder and salt. Cut in the butter until your mixture resembles coarse crumbs.
In a small bowl, combine the beaten egg and the evaporated milk. Add the wet mixture all at once to your bowl of dry ingredients and stir just enough to moisten. The best thing about these biscuits is that they are totally free form - no rolling, no cutting, no perfection - just total delicious imperfection!
So, simply spoon your biscuit batter onto your baking sheet (sprayed lightly with non-stick spray) and bake at 425* for about 10 minutes or until just golden brown. This recipe makes about 10 biscuits and you'll need about 4 cups of fruit (cut, smashed and sugared). Once they have cooled a bit, split a biscuit and pile it high with fruit! Like so...
And because they just sounded so cute, I spooned some batter into a mini muffin pan and made these sweet little strawberry shortcake biscuit bites...
...for teeny tiny strawberry shortcake trifles!!
These would be fun added to a brunch buffet or at a dessert shower/party (like this one I shared in April)!
