    We are in the home stretch! Just 10 short days until Christmas! And I don't know about you, but what I really want from Santa is just a few more hours in the day. So, in true "no-fuss food" fashion, I am sharing one of the easiest ways to make a big plate of seasonally spiced, 'put you right on Santa's nice list' cookies.

    Super Simple Gingerbread Snickerdoodles

    Santa would love to find a plate of these Super Simple Gingerbread Snickerdoodles waiting on Christmas Eve! You won't believe how easy these Christmas cookies are!

    No really. Super simple. As in these start with purchased sugar cookie dough. Now, if you have a rock star homemade sugar cookie recipe, then by all means, start a-mixin'. But, if you are short on time but still want to make a dessert that is a smidge more than just store-bought, these gingerbread snickerdoodles are for you!

    How to Make Gingerbread Snickerdoodles

    Here is what you'll need from your kitchen: (affiliate links)

    • Baking sheets - I love using big roomy 12 x 17 baking sheets
    • Parchment paper sheets - these have seriously changed my cooking baking life
    • Gingerbread spices
    • Cooling racks - I've been eyeing this 3 tiered foldable cooling rack

    These easy cookies start with a bowl full of gingerbread sugar. Which, P.S., is ah-mazing on buttered toast! Each ball of sugar cookie dough gets to wallow around in this spiced sugar until thoroughly coated.

    Super Simple Gingerbread Snickerdoodles start with classic sugar cookie dough rolled in fragrant gingerbread sugar!

    Pop each sugar and spice cookie ball on a parchment paper lined sheet.

    These guys take a quick trip in the oven and come out all round, speckled with spices and pretty irresistible. I mean, I might have done some quality assurance testing (aka cookie eating) while these gingerbread snickerdoodles were warm from the oven.

    Description

    Classic sugar cookies are rolled in a blend of fragrant gingerbread spices and baked until tender and chewy. Make these super simple Gingerbread Snickerdoodles for your cookie exchange or to leave for Santa!


    Ingredients

    Scale
    • 2 packages of 24 ready to bake sugar cookies
    • 1 tbsp ground ginger
    • 2 tsp ground cinnamon
    • ¼ tsp ground cloves
    • ¼ tsp ground nutmeg
    • 4 tbsp granulated sugar

    Instructions

    1. Preheat oven according to package directions. My cookies were baked at 350 degrees F.
    2. Prepare two baking sheets with parchment paper or non-stick cooking spray.
    3. In a small bowl, mix together the sugar and spices.
    4. Roll each pre-made cookie into a ball and roll it in the gingerbread sugar.
    5. Place cookies about 2 inches apart on baking sheet.
    6. Bake according to package directions (mine took about 13 minutes).
