Who else is ready for a shot of Spring?! My flip flops are calling from the closet and I am jonesing for beautiful Spring weather! We are seeing hints of Spring in Florida – our sweet gum tree is covered in buds and flowers are just being coaxed awake. But that doesn’t mean that Mother Nature won’t change her mind and we’ll be back to coats and scarves. I know it is still looking WAY too much like winter in other parts of the country, so I thought we could all use a big glass of liquid sunshine … otherwise known as this super yummy …
At the first sip, I was instantly reminded of an Orange Julius. It’s not quite as creamy and thick, but it tastes just like my childhood! Anyone else remember standing in line at the Orange Julius stand in the mall food court, teased bangs, stirrup pants tucked into Keds with no shoestrings, just waiting for the classic orange vanilla drink? I was trying to explain an Orange Julius to my boys and I am SO bummed that we don’t have a stand nearby. Which is even more reason that we’ll be making Sunshine Slush all the time!
- 8 oz. fresh orange juice
- 8 oz. almond milk
- 1/2 teaspoon vanilla extract
- Ice – about 3 cups
- Add the ice to the pitcher of your blender and pour the other 3 ingredients over the ice.
- Blend just until smooth.
- Split between two glasses and enjoy!
We used original almond milk, but the vanilla almond milk would probably be delicious, too!
Each Sunshine Slush only has about 85 calories and it packed with vitamin C and calcium, thanks to the OJ and almond milk. If you don’t mind the extra calories, you could add some vanilla frozen yogurt or vanilla ice cream to make the slush creamier, but I actually really loved the lightness of the slush without it. I poured my slush in a mason jar and added a drop of my Young Living orange essential oil – SO delicious!
