    skinny eggnog {using almond milk!}

    From what I hear, eggnog is one of those "love it or hate it" things.  I just can't understand that because I l-o-v-e eggnog!  Rich, thick and creamy with that hit of nutmeg - so YUM!  And since I can drink a huge glass like it is going out of style, I rarely indulge because of all.those.calories!  I'm talking like 350 calories a cup - yikes!  But today, I'm putting a skinny twist on one of my favorite holiday beverages with a skinny eggnog recipe that comes in at just under 130 calories!

    Now, I use the term "recipe" somewhat loosely since this is really just stirring up a few things.  And just so we're all on the same page, a few quick notes:

    • This is a non-alcoholic version, but feel free to booze it up if you want.
    • And yes I know, it uses a purchased coffee creamer.  BUT it tastes so good and it is a quick and easy way to add that traditional eggnog flavor for about 50 calories.
    • Finally, you can use regular milk but I love substituting almond milk because it has less calories and double the calcium!

    Ingredients

    Scale
    • 8 oz. regular almond milk
    • 1 ½ tablespoons of Coffeemate Eggnog Latte creamer
    • Dash of vanilla extract
    • Sprinkle of nutmeg

    Instructions

    1. Stir together the almond milk, eggnog coffee creamer and vanilla extract.
    2. Sprinkle with a pinch of nutmeg and enjoy!

    Notes

    Add additional eggnog creamer for a stronger flavor. If you use vanilla almond milk, you can eliminate the vanilla extract.

    This little trick allows me to enjoy that comforting flavor of eggnog without the accompanying guilt or need to skip that extra helping of stuffing!  And, as an added bonus, I get to take pretty pictures with a cream colored bottle brush tree, a fun rustic garland and a vintage measuring cup filled with fragrant whole nutmegs.  It's a definite win-win!

      Eggnog is one of my holiday guilty pleasures and I love that you lightened it up a bit! I had never heard of the eggnog coffee creamer but I am definitely going to look for it on my next shopping trip!

      Hi! I live in Australia and have absolutely no idea where i would find a creamer of any sort of what it even looks like... i was wondering if you had another substitute for it???
