Happy {almost} Thanksgiving!! Hopefully you will enjoy friends, family, a little free time and of course ... FOOD! Speaking of food, I thought I would squeeze in one last by-the-skin-of-my-teeth-just-under-the-wire Thanksgiving post. These quick Thanksgiving appetizers can be made with a few simple ingredients from your local grocery store ... so go, go now!
Quick Thanksgiving Appetizers - Cheese & Olive Turkeys
These quick Thanksgiving appetizers don't require baking or heating {thank goodness} and since the crackers are light and thin and super crispy, your little flock of cheese & olive turkeys are best enjoyed soon after assembly. What are these funny foodie little birds made with?
Ingredients
- 34 Degrees Rosemary Crisps - these were by our deli with the pita chips, bagel chips, fancy cocktail crackers, etc.
- Sargento Tastings Bruschetta Jack & Aged Wisconsin Cheddar - these are with the chunk, shredded, sliced cheeses
- Alouette Garlic & Herbs Soft Spreadable Cheese - also by our deli by the fresh mozzarella, "fancy" cheeses, etc.
- Black & Green olives

Other Tools
- Small scalloped flower cookie cutter - for the cheese 'feathers'
- Sharp paring knife
- Cutting board
The How-To
**Quick Note - it is best to assemble these guys on your serving plate so you don't have to move them too much. {Totally not speaking from experience or after seeing little olive turkey heads plop on the counter. Ahem.}
- Remove olives from any liquid and allow to dry on a paper towel.
- Spread one rosemary crisp with a tablespoon or so of the Alouette spread. This will hold up your second cracker, cheese slice and the olives, so it does need to be a little bit thick. And it's delicious, so go for it!
- Using the paring knife, cut the very bottom off of a second cracker - this makes a flat edge and it is easier to stand on your bottom cracker base.
- Cut a thin slice of cheese.
- Using the small cookie cutter, cut out a round from your slice of cheese and cut off the very bottom to create a flat edge.
- Stand the cracker and cheese 'feathers' up in the spreadable cheese on your bottom base cracker.
- Place a green olive in front of the 'feathers'.
- Add a bit of spreadable cheese to the black olive and stack on top of the green olive.
I think these are ridiculously cute - I wanted to add a pimento 'waddle' but that was all kinds of crazy. If you can figure it out, let me know!! The best part about these cheese & olive turkeys is that they are like three appetizers in one: cheese/crackers, olives and crackers/cheese spread. Fancy, right? And pretty darn delicious!!
Hey, don't be intimidated if you can't find these exact ingredients. Feel free to substitute Ritz crackers, regular sharp cheddar cheese and herb/veggie cream cheese ... I still think these quick Thanksgiving appetizers would be the hit of your Thanksgiving meal!!
