    Why I love this recipe

    • Um....pumpkin anything is my jam
    • no fancy ingredients, if you have pumpkin you probably have everything you need
    • start to finish cookies in less than 30 minutes
    • soft and chewy, no cakey cookies here

    • sugar
    • light brown sugar
    • pumpkin puree
    • egg
    • vanilla extract
    • flour
    • quick oats
    • baking soda
    • cinnamon
    • salt

    Step by step

This recipe whips up fast and easily.

    1. You'll cream together the butter and sugars then add the pumpkin, egg, and vanilla.
    2. After mixing the oats and other dry ingredients in a separate bowl, you'll add it to the wet mixture little by little until blended.
    3. A quick drop by spoonfuls onto a baking sheet and 15 minutes later you're in warm pumpkin cookie heaven!

Drizzle them with a caramel glaze, add butterscotch or chocolate chips, put a scoop of softened ice cream in between two of these for rockin' ice cream sandwiches ... or just eat them warm from the oven.  Yeah, that's how we roll in our house!

    Tips for best results

    • When measuring flour, avoid scooping it from the container as it packs it down and results in too much flour in the dough. Instead, use a spoon to add it to your measuring cup, and level it off the top with the back of a knife.
    • Let the cookies cool on the cookie sheet for a few minutes before moving them so they don't break up.
