    Pull Apart Raspberry Sweet Rolls with Cream Cheese Glaze

    Pull apart raspberry sweet rolls start with refrigerated biscuits, are then filled with fresh tangy raspberries & drizzled with a sweet cream cheese glaze!

    Breakfast is the most important meal of the day.  And it certainly should be the most delicious!  I even have it on the record from our garbage collectors that these sweet rolls are really, really delicious.  HUH?  We'll get to that in a minute, but let's just take a minute to fix your gaze on the glaze on these glorious pull apart raspberry sweet rolls!

    Okay, and now to connect the dots between these yummy berry filled breakfast rolls and our garbage collectors ...

    Our house was built in 1957.  Way before the "open concept" was popular and way before tons of natural light was the norm.  In short?  I have to take 99.9% of the pictures you see at Shaken Together, outside.  So, after hauling the sweets rolls and plates and a bowl of raspberries and a mini pitcher of glaze outside, I set everything up and started to take pictures.  In my pajamas.  {Naturally.} And at the exact time when our garbage collectors come.

    So while the two of them lifted and hauled all of our Christmas garbage into their truck, I was busy snapping away.  Until one of them shouted, "Hey!  Is that food?!"  Why yes, it sure it!  Would you like one?  They're homemade raspberry sweet rolls.  "Yes, ma'am!"  So, I trotted out - no make up, plaid flannel shorts and a tank top, camera slung around my neck - to give them a roll.  Gloves came off, bites were taken and they both actually sighed.  🙂  "And they're still warm."

    Pull Apart Raspberry Sweet Rolls with Cream Cheese Glaze

    Ingredients

    Scale

    For the Raspberry Sweet Rolls

    • Two cans (8 biscuits each Grands Flaky Biscuits)
    • Cinnamon sugar (⅔ cup granulated sugar + 1 tablespoon ground cinnamon)
    • Fresh raspberries

    For the Glaze

    • ⅓ cup softened cream cheese
    • 3 tablespoons milk
    • 2 tablespoons powdered sugar
    • 1 drop lemon essential oil (optional but delicious)

    Instructions

    1. Preheat oven to 350*.
    2. Prepare two cupcake pans with non-stick cooking spray.
    3. Roll out a biscuit until about ¼ inch thick.
    4. Sprinkle biscuit with 1 tablespoon cinnamon sugar.
    5. Press 4-5 fresh raspberries (smash the berries gently) down the middle of the biscuit.
    6. Roll up the biscuit and slice it into three pieces.
    7. Place the 3 pieces (cut edges up) in a well of the cupcake pan.
    8. Repeat for all 16 sweet rolls.
    9. Bake 14 - 17 minutes until biscuits are lightly golden brown.
    10. Allow to cool slightly and remove to a cooling rack or serving platter.
    11. In a small bowl, mix together the cream cheese, milk, powdered sugar and lemon essential oil.
    12. Drizzle the glaze over the warm rolls and serve.

    Not only do these charm garbage collectors, but they incited a good natured heated conversation between my father-in-law and a friend on my personal Facebook page over these rolls.  {Apparently, I have been neglecting the both of them in the doling out of the baked goods.}  Needless to say, they each got a personal stash of these sweet rolls set aside after this post was done.  My father-in-law even called that night to tell me to hold his because the weather was too bad for him to drive over.  They really are delicious, folks.

    And since they start with regular ol' refrigerator biscuits, they are easier that you would imagine!  Roll, sprinkle, smoosh berries, roll, slice and bake!  When they come out, they are just begging for the sweet, slightly tangy cream cheese glaze with the hint of lemon.  They are best warm out of the oven when the glaze gets a little melty.  Pull apart each section for a few gooey cinnamon sugar bites just bursting with tart raspberries.
