Don’t you just love this time of year? Color is finally starting to peek out, winter clothes can be tucked away and there are touches of Spring everywhere! It is the perfect time of year for picnics and brunches and get togethers. Spring just begs for easy, light recipes that are quick to prepare and of course, delicious! Like these no bake mini luscious lemon pies!
These start with pre-made mini graham cracker pie shells and get an extra punch of flavor from lemon curd, then piped full with a light and airy lemon fluff filling, garnished with a tiny wedge of lemon and sprinkled with freshly grated lemon zest … divine! I made these “skinny” by using sugar free pudding, skim milk and Lite Cool Whip, so these mini pies are guilt-free and perfect for a Spring luncheon or Mothers’ Day brunch!
mini luscious lemon pies
Yield: 12 mini pies
2 packages of pre-made mini graham pie shells (6 per package)
lemon curd – store bought or use my easy eggless lemon curd recipe
lemon fluff filling – recipe below
Zest of one lemon
12 small wedges of lemon for garnish
For the lemon fluff filling, mix together one small box of Jello sugar free instant lemon pudding, one cup cold skim milk and half of the lemon zest. (Reserve the rest of the lemon zest for garnish.) Allow the pudding to set for 30 seconds – 1 minute. Fold in one tub of Lite Cool Whip and be careful not to over mix. Place in a piping bag fitted with a star tip.

Since the filling has milk in it, I suggest preparing these right before serving or refrigerate them until you are ready to eat them. Aren’t they just so pretty?
