Our Mini Cranberry Cornbread Loaves, studded with tart cranberries and a touch of vanilla, are the perfect addition to your holiday meal!
Now, I don’t know about you, but cornbread is 100% part of every special occasion meal in our house. Maybe it’s my mostly southern roots. Or maybe it’s my Granny’s legendary baked cornbread dressin’. (Yes, that is dressin’ – the g is totally unnecessary, ha ha!) Whatever the reason, cornbread is a staple side dish and I’ve found a super easy way to dress it up for the holidays!

I don’t know that there is anything more gorgeous than those deep, rich red cranberries.
(P.S. Cranberries are delicious in cranberry sauce but can also be added to smoothies, used in juicing, tossed in salads and more.)
(P.P.S. Fresh cranberries can be frozen for up to a year, so buy a few bags and pop them in your freezer!)
Now you know I am all about no-fuss food, so this cranberry cornbread recipe is about as no-fuss as it gets. Mix up corn muffin mix according to package instructions, add those pretty red cranberries and a few basics from your kitchen and voila … Mini Cranberry Cornbread Loaves ready for the oven!
These little loaves bake up golden and sweet with big pops of tart, fruity cranberry!
Since I picked up a few bags (ahem, 4!), I thought I would get creative and share a no-fuss holiday home decor idea with you as well. Who said cranberries are just for cranberry sauce?!
To make this easy Cranberry Candle Centerpiece, gather the following:
- A cake stand (or a round white plate or tray)
- A shallow bowl that is just a bit smaller than the circumference of your cake stand
- A jar candle (white or cream-colored to really stand out against the berries) that fits in the bowl
- Fresh Cranberries
- Fresh rosemary sprigs
Place the candle into the bowl. Fill the space in the bowl around the candle with cranberries. Center the bowl on the cake plate and tuck fresh rosemary sprigs around the bowl to look like a wreath.
I love the white dishes against the pop of bright red berries and soft, sage-colored rosemary sprigs. It definitely isn’t any ol’ cranberry and popcorn garland! I may be a little biased, but I think this is such a pretty way to add a festive flair to a holiday table, buffet or dessert spread!

Mini Cranberry Cornbread Loaves are studded with tart cranberries and a touch of vanilla. This simple holiday side dish along with an easy Cranberry Candle Centerpiece will steal the show at any holiday meal!
- (2) 8.5 oz. boxes corn muffin mix
- 2 large eggs
- 2/3 cup milk
- 2 teas vanilla extract
- 3 tbsp powdered sugar
- 1 1/3 cup cranberries
- Preheat oven to 400 degrees F.
- Prepare two 6-compartment mini loaf pans with non-stick cooking spray.
- Mix corn muffin mix, milk, vanilla, powdered sugar and eggs and mix until all dry ingredients are incorporated.
Fold cranberries into cornbread batter and divide batter into mini loaf pans.
Bake for 16-20 minutes (baking time may vary by oven) until golden brown or until a toothpick inserted into the center of the cornbread comes out clean.
