With layers of crunchy graham cracker crumbs, tangy lemon pudding, fresh tart strawberries and fluffy whipped topping, you would never know that these Lemon Berry Pudding Parfaits are a lower sugar dessert!  These no-bake parfaits are big on flavor, super easy to make and great for picnics and parties!

Did you enjoy the 4th of July?  We started the day with lunch (and these parfaits!) by the pool with friends, caught up on the DVR and a little shut-eye and ended with an impromptu block party in the neighborhood to watch the fireworks on the golf course behind our house.  It was a pretty perfect day!  But it actually started with a smidge of anxiety.

So, our friends were providing the pool and lunch and I was in charge of dessert – naturally 😉  BUT they asked if I could make something low carb or lower in sugar.  Ummmmm …  hmm.

See, I was totally ready for brownies.  Or Cookie bars, even.  But a lower sugar dessert?

Let’s see … I could make Lemon Cheesecake Dessert Cones.  But cones are tough for wet hands. Skinny Key Lime pops would have been awesome, but I didn’t have quite enough time.

Then, I spied a few boxes of sugar-free lemon pudding in our cabinet and these perfectly portable pudding parfaits {say that 5 times fast!} were born!!

See, I told you they are easy!  You can use whatever graham cracker / pudding / fruit combo that you may have on hand.  Chocolate graham crackers + vanilla pudding + blueberries would be pretty delicious, too!

You can try this in a 9×13 pan, but the mason jars make it really easy to keep portion size under control.  And everyone loves to dig into their own individual dessert!

These surprising lower sugar Lemon Berry Pudding Parfaits are BIG on taste with layers of graham crackers, creamy pudding, fresh berries & whipped topping!


Ingredients

Scale
  • One sleeve of graham crackers
  • 2 tablespoons unsalted butter (melted)
  • Two small boxes sugar free instant lemon pudding (+ ingredients to prepare)
  • One pint of strawberries
  • Sugar Free whipped topping
  • 1012 clean half pint (8 oz. mason jars)

Instructions

  1. Prepare the pudding according to package directions and place it in the refrigerator until you are ready to assemble the parfaits.
  2. Clean and cut the strawberries into bite sized pieces.
  3. Using a food processor (or a zip top bag and a rolling pin), pulse/smash the package of graham crackers into small crumbs.
  4. Stir the melted butter into the crumbs and then divide the crumb mixture between mason jars – about 2 tablespoons per jar.
  5. Spoon the pudding into the jars, again dividing it between the jars – about 1/3 cup in each jar.
  6. Sprinkle strawberries on top of the pudding in each jar.
  7. Finally, top the berries with whipped topping.
  8. If you are serving immediately, grab a spoon and enjoy.
  9. If you are storing these to serve later, replace the lids and rings on the jars and pop the parfaits in the fridge until you are ready to serve.
