You all know I am obsessed with finding easy meals the entire family will enjoy (like Mongolian Noodles, Beef and Rice Skillet, or Ground Beef Stroganoff!)

Even better when they take advantage of my slow cooker like this London Broil or this Lazy Lasagna! This slow cooker Creamy Ranch Chicken fits the bill exactly! With only 4 ingredients and 5 minutes of prep time, it’s perfect for those busy nights when life gets crazy!

Why I love this recipe

Five minutes of prep time, 4 ingredients, and a few hours later you have chicken in a creamy, zesty sauce packed with flavor. With a chicken recipe as good as this, you’ll put this on your dinner rotation often!

Ingredients

  • boneless, skinless chicken breasts
  • packet of dry ranch dressing mix
  • cream of mushroom soup
  • cream cheese
  • starch of your choice for serving-I use bowtie pasta-more suggestions below

Instructions

  1. Place chicken breast in the slow cooker and top with ranch mix, then pour over the cream of mushroom soup, and finally top with cubed cream cheese.
  2. Cook on low for 5 hours or high for 3 hours.
  3. Shred chicken with two forks and stir to mix.
  4. Serve over your favorite pasta!

Variations

  • serve over rice, egg noodles, roasted potatoes, cauliflower rice, or on its own
  • use cream of chicken soup, cream of onion soup, or another similar variety
  • add in a veggie like peas, baby carrots, or broccoli
  • layer chopped potatoes and carrots below the chicken in the slow cooker before cooking
  • top with cooked and crumbled bacon
  • top with Parmesan or cheddar cheese

Storage

Store leftovers in an airtight container in the refrigerator up to 3 days. Reheat in the microwave.

This recipe freezes well. Store in a freezer container up to 3 months, thaw overnight in the refrigerator and reheat in the microwave.
