Now, if circus animal cookies aren't delicious enough alone, I've crammed a whole cup and a half of them in an easy peasy no bake cheesecake filling, stuffed that in a chocolate Oreo pie crust, added whipped cream and more cookies! My work here is finished people. And so is your diet. #sorrynotsorry 😉
Circus Animal Cookie Cheesecake Pie
I am in love with the fluffy pink filling - with a peek of color from a random sprinkle or two. Sprinkles make everything better. Except diets. But we don't talk about those here, k?
So, I decided to use my basic no bake cheese cake recipe - I've used it for lemon and chocolate versions - and then replaced the sugar with circus animal cookie crumbs. Because they've got to be made with plenty of sugar. And also ... why not?! I have already expressed my love for these adorable pink and white animal cookies with edible cupcake toppers ...
So cheesecake seemed a perfectly logical next step.
PrintCircus Animal Cookie Cheesecake Pie {No Bake!!}
Ingredients
- One Oreo pie crust
- One 8 oz. block of cream cheese (softened)
- 1 teaspoon vanilla
- One 8 oz. tub of Cool Whip
- 1 cup of circus animal cookies buzzed in the food processor to make crumbs
- ½ cup of circus animal cookies crumbled into small pieces
- Whipped cream (sprinkles and additional cookies for garnish)
Instructions
- In a bowl, using a stand or hand mixer, blend the softened cream cheese and vanilla and then mix in the animal cookie crumbs.
- On the lowest speed of your mixer, add ½ of the Cool Whip and mix just until incorporated.
- Scrape down your bowl and mix in the remaining ½ of the Cool Whip.
- With a spatula, fold in the ½ cup of animal cookie pieces.
- Spread the mixture into the Oreo pie crust and refrigerate.
- Just before serving, add whip cream rosettes around the outside of the cheesecake pie and top with sprinkles.
- Place additional animal cookies around the pie on the whip cream rosettes.
- Slice and serve!
As you can imagine, this is sweet. Maybe that should be SWEET. And tangy. And pretty much tastes like cheesecake with a little extra pa-pow! from those cookies. Wouldn't this be fun instead of birthday cake? Oh okay, in addition to birthday cake?! And if you wash it all down with a really really cold glass of milk, it's even better.
And I might have taste-tested that pink fluffy piece of cheesecake pie that you see above. But I won't admit to it. At least I ate lunch first. Maybe 😉
