I really hate to do this to you. I know, I know … you are a classic BBQ staple and Southern favorite. You have a space reserved between the potato salad and deviled eggs.
But, move over coleslaw, there is a new cabbage salad in town!!
So, I get it. You’re probably thinking, really? Cabbage salad? Really?
Really.
There is a little Mediterranean restaurant near our office in down town that serves this salad. One day, when they were out of stuffed grape leaves, I ordered their tomato and cabbage salad on a whim. Now? Hooked! I can’t get enough! I order it every single time we head over for their yogurt marinated chicken kabobs and homemade garlicky hummus. But on the weekends, when my favorite cafe is nowhere in sight, I can make this crispy cabbage salad right at home!

This salad is crisp and crunchy with a tangy dressing loaded with lemon and garlic. It is easy, SO easy, to put together, especially if you take advantage of the pre-shredded cabbage in the produce section of your grocery store {ahem, like I did}. There is no mayo or creamy dressing, so this chilled, crisp and light cabbage salad is perfect to serve at all those warm Summer BBQs!
You can use this same lemon garlic dressing over salad greens or pasta salad, too!

Crisp Cabbage Salad with Lemon Garlic Dressing

Description
Move over coleslaw, this fresh and crispy cabbage salad with lemon garlic dressing is our new staple Summer side dish! You’ll love the tangy dressing!
Ingredients
- One 10 oz. package shredded green cabbage
- 2 Roma tomatoes (quartered)
- 1 teaspoon minced garlic
- 2 T lemon juice
- 2 T olive oil
- Salt & pepper to taste
Instructions
- In a large bowl, smash the minced garlic until it is a paste.
- Whisk in the lemon juice and olive oil.
- Toss in the cabbage and tomatoes.
- Sprinkle with salt and pepper and toss again.
- Refrigerate for at least two hours before serving.
Notes
I used packaged shredded cabbage for a short cut but you can use your food processor to shred fresh cabbage, too. I like Roma tomatoes because they are smaller and have less seeds and juice inside. As for the dressing, you can adjust the amount of lemon and garlic to taste.

Great dish, looks and sounds so good, crisp and light. Think I ‘d love this and hubs would want to add all kinds of veggies to it. Whichever way I’d like to make some. And I’ll definitely buy the pre-shredded cabbage. We usually only buy the roma tomatoes, others too expensive for our budget now. We were hoping to get tomatoes from our plants but they’ve died, too hot.
